I've got to add to the previous brief outbreak of Ishtar love with a write-in vote for her. Macross II may have had its share of flaws but the Emulators were certainly not one of them! But if I'm limited to the 'official' choices here, I'd go with Mylene. She's a fair pilot so no accidentally flying the Valk straight into the ground, I enjoy her tunes, and she wouldn't drain the blood out of my brain at the wrong time just for kicks like some Galactic Nymphs I could name. I'm trying, but I just can't see one. I mean I might make an ass of myself with the idol worship (okay, and having inappropriate thoughts about my new mother-in-law) but that's about it.
